Vanilla salmon gravlax

For 8 people

Ingredients

  • 500g of salmon
  • 3 tablespoons vodka or sake  
  • 8 tablespoons white sugar  
  • 4 tablespoons sea salt
  • 1/2 teaspoon lemon zest
  • 1 vanilla pod

Preparation

Prepare the salmon by removing all the bones.

Split the vanilla pod to collect the seeds with a knife.

Mix the alcohol, sugar, salt, vanilla beans and lemon zest together then massage the salmon with the mixture.

Wrap the salmon in cellophane and place in a deep dish.

Leave to marinate for 2 days in the fridge, the salmon will become firm and dark pink in color.

Remove the salmon block from the marinade and dry it with a paper towel

Cut into thin strips and serve 

Advice

Serve with butter on toast or blinis.
