Vanilla sauce

For 4 people

Ingredients

  • 50g butter
  • 20 cl of liquid cream
  • 15 cl of dry white wine
  • 2 shallots, finely chopped
  • 1 vanilla pod
  • salt and pepper

Preparation

Sweat the shallots with the butter.

Add the vanilla beans and the pod cut in half. 

Moisten with the white wine and reduce over low heat.

Then add the cream, salt and pepper to taste.

Let simmer over low heat until a sauce forms.

Pour the sauce over a chinois into a bowl to remove the shallots and clove.

Serve with fish.
